Starlight Berry Cloud Tarts

Ingredients

For the Crust:

  • 1 ½ cups crushed lunar crackers (or graham crackers)
  • 6 tablespoons melted starlight butter (or regular butter)
  • 2 tablespoons golden honey

For the Filling:

  • 1 cup fresh starlight berries (or blueberries)
  • 8 oz cream cheese, softened
  • ⅓ cup sweetened condensed milk
  • 1 teaspoon moonflower extract (or vanilla extract)
  • 1 cup whipped cream

For the Glaze:

  • ¼ cup apricot jelly, warmed
  • Edible silver dust (optional, for shimmer)

Directions

  1. Prepare the Crust: In a bowl, mix crushed crackers, melted butter, and honey. Press evenly into 6 mini tart molds. Chill for 30 minutes.
  2. Make the Filling: Blend starlight berries until smooth; strain to remove seeds. In a separate bowl, beat cream cheese, condensed milk, and moonflower extract until smooth. Fold in whipped cream, then gently stir in 3 tablespoons of puréed berries for a marbled effect.
  3. Assemble: Spoon filling into chilled crusts. Swirl remaining berry purée on top for a galaxy-like pattern.
  4. Chill: Refrigerate for at least 2 hours, or until set.
  5. Glaze and Serve: Brush each tart with warm apricot jelly. Sprinkle with edible silver dust if desired. Garnish with a single fresh starlight berry.

Notes

  • Starlight berries are a fictional fruit rumored to grow only in mountain clearings under a full moon, emitting a soft glow when ripe.
  • For a vegan version, use dairy-free cream cheese and whipped coconut cream.
  • These tarts are best served cold and look stunning at evening gatherings.
